Game Day Favorite: Easy Rotel Cheese Dip 

Football season is back, and whether you’re cheering on your favorite team from the couch or hosting friends and family, every game day needs a good dip! This easy Rotel cheese dip is always a crowd-pleaser, takes just a few ingredients, and is perfect for serving with tortilla chips. 

Ingredients: 

  • 1 block Velveeta cheese, cubed 

  • 3-4 cans Rotel diced tomatoes & green chilies (drain at least two completely and then drain the other cans to your preferred consistency) 

  • 1 package frozen spinach, thawed and thoroughly drained (optional)  

  • 1 lb of cooked and drained ground beef (optional) 

  • Tortilla chips for serving 

Recipe: 

Add the cubed Velveeta and Rotel to a slow cooker, or on the stovetop on medium heat and heat until the cheese is completely melted. Stir frequently if using the stovetop. Mix in your well-drained spinach for a simple cheesy spinach version, and/or add cooked and drained ground beef for a heartier game-day dip. 

Keep it warm in the slow cooker and let everyone help themselves throughout the game. It’s easy, cheesy, and one of those recipes that tends to disappear before halftime!
